The Perfect Waffles

3 cups almond flour
1 cup unsweetened applesauce
6 eggs
4 Tbsp olive oil or melted coconut oil
1 tsp baking soda
1 tsp vanilla
1/2 tsp salt

Mix wet ingredients and dry ingredients separately then incorporate dry ingredients into wet ingredients and cook until crispy. I serve them with applesauce on top as well and a sprinkle of cinnamon.

These are another great option for the paleo toddler as a take along snack.

    I enjoy these waffles and have made some modifications along the way. I use 1/2 the amount of almond meal and use 2/3 to 1/2 cup coconut flour and 1 tbsp arrowroot powder. I also like to add a good amount of cinnamon, b/c I just like it. Thanks for the recipe!
