BBQ ribs

This is enough sauce for 2 to 3 racks. I freeze the unused portion.

6 oz tomato sauce
14 dates
9 oz water
1/2 cup apple cider vinegar
1/4 cup oil
1 onion
Tbsp pepper (or more)
Tbsp red wine vinegar
Tbsp liquid smoke
2 tsp garlic
2 tsp cinnamon
2 tsp mustard powder
2 tsp hickory salt
1 tsp smoked paprika
1 tsp cayenne
1/2 tsp fennel
1/2 tsp cumin
1/2 tsp ginger
Dash allspice

Preheat oven to 350. Take the pits out of the dates and food process them with the vinegars. Set the dates aside. Peel and dice the onion and food process it with the water and tomato paste. Add it to the dates and add the remaining spices. Put a large piece of tinfoil on a baking sheet. Rub the ribs with oil and spoon on the sauce and spread it around like frosting. Wrap the ribs in tinfoil and bake for 2 1/2 hours. Uncover and broil until the sauce starts to bubble. Enjoy with lots of veggies! These were even tender after I took them to work and microwaved them.
