Darn Good Pancake Mountain

1 c coconut flour
2 Tbsp almond flour
4 eggs
1 1/4 cup milk
1 Tbsp melted coconut oil
1/4 tsp baking soda
1/4 tsp baking powder

I put a Tbsp of heavy cream in the measuring cup before filling to 1 1/4 cup volume with almond milk to add extra fat. As always with coconut flour leave it to sit and absorb the milk and eggs. Makes about 15 to 20 4 inch pancakes. Cooked in butter 🙂
