Pre Baked Sweet Potato Scramble with Ground Turkey

Any ground meat plus sweet potato scrambled in eggs is delicious if you add ” breakfast spice.” breakfast spice consists of 1 tsp salt, 1Tbsp onion powder, 1 tsp pepper, 1/2 tsp cayenne pepper. It’s great for eggs, hash browns or making sausage.

Oh no! Paleo Oatmeal!

1 ripe banana
2/3 cup walnuts
10 macadamias
10 dried apple slices
1/3 cup applesauce
2 Tbsp shredded coconut
1 Tbsp cinnamon
1/4 tsp salt

Food process all together and microwave until warm. It was actually too sweet for my taste so I used the rest combined with eggs to make muffins for my toddler. And ended up eating eggs, again.

Cinnamon Apple Walnut Bread

So lately I’ve been buying gluten free instead of taking the time to bake paleo. We had extra diced apples left over so I felt inspired 😉 Also I like to complain about the cost of almond and coconut flour and then spend $20 on yogurt and $20 on gluten free cereal. I need to break the cycle. I’ve been ordering groceries from Peapod so it’s much easier to see what I’m buying and how much from each department. Or finding alternatives like deleting ice cream and adding frozen chocolate bananas 🙂 Even at the grocery store I will audit my cart before checkout for “paleo-ness” and put back a majority of cheats. I’m only human after all.

Any variations on this recipe are encouraged!

ingredients

1 1/2 cup diced apples
4 eggs
4 Tbsp Coconut Flour
4 Tbsp melted coconut oil
1/4 cup Madhava coconut sugar
2 Tbsp chopped walnuts
1Tbsp cinnamon
1/2 tsp vanilla
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder

Preheat oven to 350. In a bowl mix eggs and coconut flour and let sit. Grease a 9×9 glass baking dish with some of the melted coconut oil. Add remainder of oil to bowl followed by cinnamon and most of the coconut sugar. I saved a little less than half for sprinkling on the top. Add remaining ingredients with apples being added last saving 1/2 cup of apples for sprinkling across the top. Pour mixture into baking dish. Top with apples, then walnuts, and finally remaining sugar. Bake 20 to 25 minutes.

Chocolate Chip Coconut Muffins

recipe:
8 eggs
1 cup coconut flour (I use Bob’s Redmill)
3/4 cup your choice chocolate chips (I use 365 70% dark)
1 stick melted butter
1/4 cup 365 Virgin Unrefined Coconut Oil
3 generous Tbsp Stakich Raw Honey
1 1/3 tsp baking soda
3/4 tsp baking powder
1/2 tsp salt

Preheat oven to 350. Add eggs, flour, salt, and honey and allow to sit for the coconut flour to absorb the egg. Coconut flour is very spongy. Add baking soda and baking powder and mix. Add chocolate chips. Portion into reynolds baking cups greased with coconut oil. Bake on 350 for 23 minutes 😉 My son loves these! This is a great alternative to giving him grain based snacks. And they are high in fiber!

Darn Good Pancake Mountain

1 c coconut flour
2 Tbsp almond flour
4 eggs
1 1/4 cup milk
1 Tbsp melted coconut oil
1/4 tsp baking soda
1/4 tsp baking powder

I put a Tbsp of heavy cream in the measuring cup before filling to 1 1/4 cup volume with almond milk to add extra fat. As always with coconut flour leave it to sit and absorb the milk and eggs. Makes about 15 to 20 4 inch pancakes. Cooked in butter 🙂

Sugar Detox: day two

So I realize as this is my first challenge I need to be more reasonable with my expectations 🙂 My brain feels a little dried up and I’m having a hard time eating enough vegetables to stay even close to zone. I’m going to add a serving or less of berries with breakfast so I can feel good enough to make it through a WOD. Today is rope climbs. The other benefit of adding berries is I can try out the chia seeds I bought! If you recall the guidelines our recommendation for level one detoxers is a serving of citrus or berries. photos to follow…

Also, I stopped at Whole Foods yesterday and bout two 3 pound beef roasts and two 3 pound pork shoulders on sale! They also had chicken breast on sale $5 a pound. On sale at Jewel is about $2 per pound for chicken and $2.99/lb for beef and pork roasts. At any quality I like to get the best deal so if Jewel is going to charge $5/lb I might as well go to WF.

Sugarless Coconut Muffins

I was eating too much oil so when I was making pancakes so I made these.

1/3 c coconut flour
2/3 c milk
5 eggs
Tbsp melted butter or Coconut oil
1/4 tsp baking soda
1/4 tsp baking powder

Oil bottoms of 12 paper baking cups.
350 15 mins
